Another Year Older.

I had a birthday this week. You know you’re getting old when you forget how old you are. On Tuesday, I thought I was already 38…but I knew I wasn’t turning 39…so I came to the conclusion that I was still 37 for one more day. And now I’m 38.

It’s been a pretty low-key week in my world. I’ve been pottering away at home, getting organised for Easter (and school holidays) and enjoying some slower days. Autumn is such a welcome season, and I’m soaking up the cooler mornings and sunny days.

Joey and I have always loved driving through the Adelaide Hills at this time of year. I think that might have to be on the cards before we venture away for Easter. Traditionally, we’ve made picnics (including big batches of her homemade hot cross buns), a thermos full of tea, and found a cute spot to eat, read, and relax. If you’re new to Adelaide or visit this time of year, the Mount Lofty Botanic Gardens are stunning.

Before we get into the issue, I need to highlight this week’s recipe because it is one of the BEST-EVER: My Mum’s Homemade Chicken Schnitzels. These have long been a family favourite, and I can’t believe I’ve been sharing recipes with you for 119 weeks (!) and have never shared Mum’s recipe!

I made them last week, and we had a VERY happy household. I think I’ve ruined Josh from ever ordering a Chicken Schnitty at a pub again… they’re that good. I’m also sharing the gravy you have to have with them, plus how to make the perfect oven-baked chips. PLUS, the secret ingredient/hack that makes this recipe so good.

So without further ado…
