This was my face when I remembered it was a long weekend!

What have you got planned? Are you going away?

I have to work on the Sunday which puts a halt on any plans to get away but we’ve still got some loose, fun plans.

Now I’m a seasoned mountain biker (proof below) we might go for the longer ride to the beach we were planning to do a few weeks ago (when it ended up being 40 degrees!). A date night is also on the cards, along with a drive, the gym and hopefully a few naps thrown in for good measure. I can’t wait!

I also wanted to highlight some of the epic recipes from The List I’ve made this week that have knocked everyones socks off at home, even though it’s not their first time having them.

On Sunday I had some 1:1 time with Josh’s eldest and her #1 request was to “Cook Cookies!”. This Chocolate Chip Cookie recipe never fails (Women’s Weekly for the win!). We had heaps of fun making them and the cookies were mouthwateringly good. So much so that Josh’s sweet tooth didn’t stand a chance and 35 cookies were polished off in 3 days.

Every Monday night in our house is “Sushi Bowl Night!” because the girls and Josh love them, and I love that they’re healthy. It’s also nice to have little traditions - one for memories but 2 it saves me having to decide what’s for dinner.

On Tuesday I worked from home and whipped up “Chrissie Swan’s Slow Cooked Lamb Shoulder” and it melted in our mouths. Josh and I made toasted sangas with the leftovers and I think that was even better than our original meal. I highly recommend using focaccia!

For dessert on Tuesday I made “Georgia’s Mum’s Brownie” because it is one of the lowest effort-highest reward recipes in my archives. Geez it’s good. if you’ve not made it — please do yourself a favour. Serve it warm with a little bit of ice-cream to take it to the next level.

And last night I made the “Smash Dumpling Tacos” again. Ohhh they’re so so so delicious, easy and fun for something different.

I hope that inspires you to get in the kitchen this weekend. All of the recipes are lazy-girl approved!
